Holy cow did this week go by fast. I was so busy that looking back, each day seems to run into the next, coming together to form a great big fuzzy memory. I'm not sure how acurate this (late) Friday fess-up is going to be, but I'm going to give it a go.
Highs: Although I did not go running at all this week, I did get quite a bit of walking in, thanks to a two-week part-time job I picked up. Both this week and last I have spent a lot of time hanging out with a group of high schoolers from Senshu High School in Japan. The first week we took a tour of campus/downtown, as well as the stadium, and we went to a Saltdogs game. The second week we went to the Omaha Zoo, the Tractor Museum and Dairy Store on East Campus, Westroads Mall in Omaha, and a Walmart here in town. We also had a picnic in Pioneers Park, took a tour of a high school, and went to a good-bye dinner. I had an amazing time over these two weeks, and I walked much more than usually. I also played volleyball and tag with the students at Pioneers Park, which completely wore me out. It was so much fun.

Lows: I didn't track my eating this week (or last week, for that matter). I also ate a lot of hamburgers and hot dogs (at the zoo, the picnic, etc.), so there weren't very many fruits and veggies in my diet...
Results: My weight stayed the same this week. I am still down 2 pounds, which is nice, but I would like to start making progress again.
Recipe of the Week: I didn't really make anything last week, since I was out and about every day. However, since this is a catch up post, I did make something this evening that I would like to share with you: black bean corn salsa. This is the second time I have made this recipe, and I absolutely love it.
